Red Lentil Tomato Carrot Sambar (Instant Pot Method)

DESCRIPTION: Red lentil tomato carrot sambar (using instant pot) is a tasty and yummy recipe  which can be done under 30 mins with zero monitoring .Sambar is one of the South Indian comfort foods which we can have as breakfast, lunch, or dinner with other South Indian delicacies such as Rice, Idly, Vada, and Pongal.

  

INGREDIENTS :

1 cup Red Lentil

1 Tomato

1 Carrot

1 Onion

2 Egg plants

1/2 Bottle guard

2 Green Chilies

2tbs Tamarind juice

1tbs Jaggery

2 to 3 tbs of  Homemade Sambar powderHere is the video for this recipe

1tbs Kasuri Methi

Salt to taste


Ingredients  for  TEMPERING:

2tbs Oil                                        

1tbs Jeera 

1tsp Mustard seeds

1tsp Hing

Few curry leaves

Freshly Chopped Coriander 


INSTRUCTIONS: Here is the video for this recipe 

1.Add rinsed dal and sufficient water to instant pot.

2.Add carrots and tomatoes to dal.

3.Take remaining cut veggies into a bowl .Add some water and a pinch of salt to the cut veggies .Place this bowl on the stand which comes with instant pot.

4.Set the instant pot to PORRIDGE MODE  with vent close. After timer off release the pressure slowly and change the mode of the instant pot to SLOW COOK MODE while adding other ingredients.

5.On SLOW MODE add tamarind juice, jaggery ,sambar powder and give a quick mix then add salt and kasuri methi .

6.Heat oil in a small pan for tempering. Once hot, add all the ingredients listed for TEMPERING .

7.Finally add freshly chopped coriander and dish out.

7.Enjoy it with hot rice and papad.
